Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, room temperature
  • 1 cup light brown sugar
  • 1 cup granulated sugar
  •  2 eggs
  •  2 teaspoons vanilla
  • 2 cups old-fashioned oats
  • 2 cups dried cranberries (or about a cup and a half of fresh cranberries - my mom loves the cookies with fresh cranberries)

Directions

  • Preheat oven to 375.  Line two baking sheets with parchment paper.  (I lightly greased mine by spraying cooking oil on paper towel and rubbing across cookie sheet.)
  • In a medium bowl whisk together flour, baking powder, baking soda and salt.
  • In a large bowl, cream butter and sugars together until light and fluffy, about 3 minutes.
  • Add the eggs and vanilla and mix until well combined.
  • Reduce the mixer speed to low and gradually add flour mixture, mixing until just incorporated.
  • Using a rubber spatula, stir in the oats, white chocolate chips and dried cranberries.
  • Roll dough into balls and place on cookie sheets.  Flatten the tops slightly with your fingers (optional).
  • Bake until cookies turn slightly golden, about 10 minutes.
  • Remove from the oven and let cool on the baking sheet for 2 minutes.  (They will finish setting up on the baking sheet if taken out slightly underdone, rather than getting too brown and hard.)
  • Transfer to a wire rack until completely cool.  Store in an airtight container at room temperature.

Contributor's Notes

These cookies are loved by both my mom and my grandma. I have never actually made them with dried cranberries as my mom really loves them with fresh but I am sure that with dried cranberries they would be delicious as well!
